This fantastic recipe is ideal when you forgot to defrost something and you are out of time, it's super easy, fast and delicious. I usually do it with tagliatelle because it's one of my favourite kinds of pasta, but you can easily do it with any kind of pasta you fancy, even with spinach and ricota tortellinis which is also a great combination. This recipe is suitable for vegetarians and it could easily become a vegan recipe if you do it to soya cream.

  • 400 grams of tagliatelle
  • 1500 grams of water
  • 1 tin of sliced mushrooms
  • 200 grams of double cream
  • 1 little onion
  • salt and black pepper to taste
  • drizzle of olive oil
  • grated cheese (opcional)

Directions:
  1. In the Thermomix bowl, add the water, a drizzle of olive oil, a pinch of salt and program 10 minutes, Varoma, speed 1.
  2. Add the pasta and cook for the the time set in the pasta package, 100º C, speed 1, reverse.
  3. When it's cooked, drain the pasta and set aside.
  4. Put the onion sliced in quarters and the drained mushrooms, in the cleaned Thermomix bowl, and chop for 5 seconds, speed 5.
  5. Scrape all the bits from the sides of the bowl and sauté for 5 minutes, 100ºC, speed 1.
  6. Add the cream, season with salt and pepper and program 5 minutes, 100ºC, speed 1.
  7. Mix together the mushroom sauce and the pasta, top with grated cheese, if you are crazy with pasta and cheese like me, and it's ready to serve.

Ingredientes:
  • 250 gramas de seitan (fiz na Bimby)
  • 1/2 cebola média
  • 10 gramas de salsa
  • 1 ovo
  • sal e pimenta q.b.
  • noz moscada q.b.
  • pão ralado q.b.
Preparação:
  1. No copo da Bimby, colocar a cebola e a salsa e picar 5 segundos, velocidade 5.

The other day I decided to venture in the making of homemade seitan. This is a great source of protein and a substitute of meat in vegetarian and vegan diets. For that I followed the recipe in the Portuguese Basic Cookbook of my Thermomix, but online you can discover many recipes of homemade seitan. The recipe left me with 500 grams of seitan ready to make numerous vegetarian and vegan dishes. As I had 250 grams of seitan left, after making Chilli con seitan (recipe of the same Portuguese Basic Cookbook) I decided to do an experiment and try to make homemade Seitan Burgers. However this recipe isn't vegan, because it has an egg in it.

Ingredients:
  • 250 grams of seitan (made mine in the Thermomix)
  • 1/2 medium onion
  • 10 grams of parsley
  • 1 egg
  • salt and pepper to taste
  • nutmeg to taste
  • breadcrumbs to taste
Directions:
  1. Put the onion and parsley in the Thermomix bowl and chop for 5 seconds, speed 5.
  2. Add the seitan, the egg, a bit of breadcrumbs and season with salt, pepper and nutmeg and mix for a few seconds, speed 4, reverse. If the consistency of the mixture it's a bit soft, add more breadcrumbs and mix it together for a few seconds.
  3. Remove the mixture of the Thermomix bowl and shape your hamburgers.
  4. Grill the hamburgers.
Serves: 4 Hamburgers

You can also fry the Hamburgers in a pan with a bit of oil, but we prefer them grilled as it's more healthy. If you are like us, in the end of grilling add a slice of cheese on top of the Burger and let it melt. Serve with rice and salad or in a Burger Bun with everything you like.

  • 1000 gramas de água
  • 200 gramas de ervilhas congeladas
  • 200 gramas de milho congelado
  • 4 ovos
  • 2 latas de atum pequenas
  • 1 lata de feijão frade
  • sal q.b.
  • azeite e vinagre balsâmico q.b.
Preparação:
  1. No copo da Bimby colocar a água e o sal. No cesto colocar o milho, as ervilhas e os ovos inteiros, bem lavados.
  2. Programar 25 minutos, temperatura Varoma, velocidade 1.

Serve: 4 pessoas

Another typical dish in many Portuguese homes, we make it a little bit different than the tradicional way, here is our version, hope you enjoy.

Ingredients:
  • 1000 grams of water
  • 200 grams of frozen peas
  • 200 grams of frozen sweet corn
  • 4 eggs
  • 2 small cans of tuna
  • 1 can of black eyed beans
  • pinch of salt
  • Olive oil and balsamic vinegar to taste
Directions:
  1. Put the water and salt in the Thermomix bowl. In the simmering basket add the peas, sweet corn and the whole eggs well rinsed.
  2. Cook for 25 minutes, temperature Varoma, speed 1.
  3. When it's cooked, remove the basket and the water of the Thermomix Bowl, peel and cut the eggs in chunks.
  4. Add the peas, corn, black eyed beans, tuna and eggs to the Thermomix bowl and mix it together for 1 minute, speed spoon, reverse.
  5. Put the mixture in a serving bowl and drizzle with olive oil and balsamic vinegar to taste.
It can be served warm or cold.
You can add or substitute the ingredients for others of your choice like chickpeas, diced carrots or potatoes, green beans.
You can serve it with mayonnaise (the Thermomix does it) instead of the olive oil and balsamic vinegar, but we prefer it this way, because it's more healthy and very tasty.
