Bolo de Laranja / Orange cake

De volta às receitas!
Hoje trago-vos a receita de um bolo de laranja delicioso, super simples e rápido de fazer, como nós gostamos. Esta receita foi-me dada pela minha mãe e é feita com a laranja inteira. As fotos correspondem a metade da receita. Espero que gostem...

Ingredientes:

  • 4 ovos
  • 2 chávenas* de açúcar
  • 1/2 chávena* de óleo
  • 2 laranjas inteiras
  • 2 chávenas* de farinha
  • 1 colher de sopa de fermento em pó


Preparação:
  1. No copo da Bimby colocar os ovos, o açúcar, o óleo e as laranjas bem lavadas, sem os topos, apenas cortadas em quartos e triturar alguns segundos na velocidade 6, até estar uma pasta homogénea.
  2. Adicionar a farinha e o fermento e envolver uns segundos na velocidade 4.
  3. Colocar a mistura numa forma previamente untada e enfarinhada ou numa forma de silicone e levar ao forno, pré-aquecido a 180ºC, durante aproximadamente 45minutos ou até espetar um palito e este sair limpo.
*Chávena corresponde à medida cup.

Today I bring you the recipe of a delicious orange cake, so simple and quick just how we love. This one was brought to me by my mother and it's made with the whole orange so nothing goes to waste. I only made half the recipe, so the cake in the fotos is smaller. Hope you enjoy...

Ingredients:
  • 4 eggs
  • 2 cups of sugar
  • 1/2 cup of oil
  • 2 whole oranges
  • 2 cups of plain flour
  • 1 tbsp of baking powder

Directions:
  1. Put the eggs, sugar, oil, the oranges divided in four, well rinsed and without the tops, in the Thermomix bowl and blend for a few seconds, speed 6 until soft.
  2. Add the flour and baking powder and whisk for a few seconds, speed 4.
  3. Put the batter in a silicone mould or a tin well coated with butter and flour and bake in a pre-heated oven (180ºC) for approximately 45 minutes or until you probe the cake with a skewer and it comes out dry.

A Bimby / The Thermomix

Este post vai ser um bocadinho diferente do habitual, não tem nenhuma receita, vai ser a falar de um dos meus gadgets de cozinha. Quem me conhece e quem segue este blog já percebeu que tenho uma Bimby. Pois é, tenho uma Bimby TM31 há uns dois anos e simplesmente adoro-a, a minha maneira de estar na cozinha mudou da noite para o dia desde que a recebemos cá em casa. Antes, cozinhar para além de nem sempre apetecer, era sempre um processo moroso e acabávamos por comer muitas vezes a mesma coisa, desde que fosse rápido e fácil de fazer, só tinha paciência para fazer uns docinhos de vez em quando e como uma pessoa precisa de comer todos os dias e não nos podemos alimentar de doces exclusivamente, pensamos que a Bimby seria uma boa opção e não podíamos estar mais correctos.

Com a Bimby passamos a poder confeccionar pratos mais elaborados numa fracção do tempo e da mão de obra necessária pelo método convencional. Diversificamos o leque de receitas que tinhamos à disposição e também começamos a fazer receitas mais saudáveis. Claro que os doces não deixaram de existir, mas até esses passaram a ser feitos na Bimby.


Mas o que é afinal a Bimby (duvido que haja alguém que nunca tenha ouvido falar), a Bimby é um robô de cozinha que para além de triturar, cortar, mexer, também cozinha os alimentos, cozinha a vapor, amassa, emulsiona, pesa os ingredientes e tem a vantagem de se ter total controlo sobre a temperatura. Só não frita, nem grelha, nem assa, mas os fritos raramente entram cá em casa e para grelhar e assar temos o grelhador e o forno , respectivamente. Basicamente tudo o que comemos cá em casa é feito pela Bimby, inclusive certos ingredientes que anteriormente teríamos de comprar, agora fazemos com a Bimby, como por exemplo o açúcar em pó. Outra grande vantagem que encontro em ter a Bimby é que posso por a comida a fazer, sem ter de me preocupar muito com ela, uma vez que está constantemente a mexer, não há o risco de a comida se queimar e ficar colada ao fundo do tacho e enquanto a Bimby faz a comida eu estou livre para ir fazer outras coisas sem me preocupar.

Se por acaso nos falta inspiração para as refeições e lá vem a tão temida pergunta "o que vou fazer para o jantar?" há um vasto leque de receitas quer seja em livros, blogs ou nas várias comunidades de receitas Thermomix em todo o mundo, é só escolher e pôr mãos à obra.

Não há como não adorar a Bimby, aliás nós cá em casa gostamos tanto que não resistimos em comprar o novo modelo a Bimby de 5º Geração e estamos ansiosamente a contar os dias para finalmente a termos cá em casa.
Mas o que tem esta nova Bimby que a outra não tem? A base é a mesma, quando já se tem um produto tão bom, há pouco a melhorar, mas mesmo assim conseguiram e a nova Bimby 5º Geração para além de ser ainda mais gira, ter maior capacidade quer no copo, quer na Varoma (peça usada para cozinhar a vapor), ainda possui um ecrã táctil a cores em vez dos botões que o modelo TM31 tinha e ainda tem a capacidade de se colocar fichas de receitas digitais e fazer a receita passo-a-passo conforme a indicação que vai aparecendo no ecrã. Estas são basicamente as maiores diferenças que encontro nos dois modelos, mas quando lhe tiver dado alguma utilização irei fazer um post sobre a minha apreciação da nova Bimby.

Este fantástico aparelho de cozinha não se encontra disponível nas lojas, apenas pode ser adquirido através de agentes após uma demonstração, mas pela experiência que tenho, confio absolutamente na empresa, têm uma boa assistência e estão sempre dispostos a ajudar.
Para este post não se alongar demasiado e como não sou nenhuma agente para saberem mais sobre este fantástico aparelho consultem o site oficial ou se tiverem alguma dúvida comentem que eu tentarei responder o melhor que conseguir. 

This post is going to be a little bit different, it's not about any recipe, it's about one of my gadgets in the kitchen. Everybody who knows me or follows this blog knows that I own a Thermomix.
Yes, I own the Thermomix TM31 for about 2 years now and I simply love it, my way of being in the kitchen changed from night to day since it arrived at our home. Before we had it the process of cooking was a pain and sometimes we end up eating the same recipes over and over again.

With the Thermomix we started to cook more elaborated meals for a fraction of the time and effort of the tradicional methods. We diversified our range of recipes and also started to eat healthier.

In my country the Thermomix is largely known by the public, here in the UK more and more people are getting acquainted with the Thermomix. But for someone who doesn't know it, the Thermomix is a kitchen robot that instead of just chopping, mixing or whisking it also cooks, blends, mills, kneads, emulsify, steams, weights the ingredients and as the advantage of precise heating. It just don't deep fry, grill or bake, but in our house deep fried food it's a no no and for grilling and baking we have the grill and the oven. Basically everything we eat it's made in the Thermomix, even certain ingredients like icing sugar are made in the Thermomix. Another great advantage that we see in the Thermomix is that you can make your meals without have to constantly worry if its gonna burn and stick to the bottom of your pan, because its always stirring, you can also let it cook and go do another thing.

If you lack inspiration and don't know what to cook for dinner you have tons of recipes either in cookbooks, blogs or in the various recipe communities around the world, here in the UK it doesn't exit yet, but it's promised to launch this year.
There's nothing not to love in the Thermomix, in our house we love it so much that we couldn't resist to buy the new model the Thermomix TM5 and we are super excited and anxious to finally receive it in our home.

What's new in this Thermomix, how do you perfect perfection? They can, because with the same base the new TM5 is even more beautiful, the bowl and the varoma (accessory to steam) are larger, it also has a colour touchscreen display rather than the buttons of the TM31 and it even has smart Recipe Chips that you attach to your machine and you can follow the recipes step-by-step on the screen of your Thermomix. These are the main differences that I know of between the two models, but when I have hands-on experience with my new TM5 I will post here my review.

You can only buy this fantastic kitchen appliance by booking a demo with an advisor and not in some retail store, but in my experience, the company has my total trust, they have very high standards, and very good assistance.

Muffins de atum com farinha de arroz / Tuna muffins with rice flour



Olá outra vez! 
Hoje trago-vos uma receita salgada para variar, uma adaptação de uma receita que vi no fantástico blog "Saudável como um pêro, sem desespero". É uma receita simples, prática e saudável e como é feita com farinha de arroz, significa que também não contém glúten, só vantagens. Podem servir quente ou frio, acompanhado de arroz ou salada ou até como um lanche.

Prontos para ir ao forno/Ready to go to the oven
Ingredientes:
  • 60g de arroz (para fazer a farinha)
  • 2 ovos + 2 claras
  • 1 colher de sopa de iogurte grego magro
  • 2 latas pequenas de atum natural ou uma grande
  • 1 cebola
  • 50 gramas de pimentos (uso congelados)
  • 190 gramas de tomate triturado
  • sal e pimenta q.b.
Preparação:
  1. Pré-aquecer o forno a 180ºC.
  2. Colocar o arroz no copo da Bimby e pulverizar alguns segundos na velocidade 10 até obter uma farinha. Retirar do copo e reservar numa taça.
  3. Colocar no copo da Bimby a cebola, os pimentos e o tomate e triturar 5 segundos na velocidade 6. No final do tempo, com a ajuda da espátula, baixar os resíduos da parede do copo e programar 6 minutos, 100ºC, velocidade 1.
  4. Na taça com a farinha de arroz adicionar os ovos, as claras e a colher de iogurte grego e misturar tudo muito bem até obter uma mistura homogénea.
  5. Findo o tempo do refogado, adicionar ao copo da Bimby o atum escorrido, temperar com sal e pimenta e programar 5 minutos, 100ºC, velocidade 1.
  6. Juntar a mistura do atum à taça com a mistura da farinha e ovos, lentamente e sempre a mexer bem para que os ovos não cozam, até obter uma mistura homogénea.
  7. Colocar esta massa em formas de muffins, de silicone, e cozer no forno pré-aquecido durante aproximadamente 30 minutos ou até estarem bem cozinhados.
Serve: 6 muffins

Today I bring you a savoury dish, an adaptation of a recipe that I saw in the fantastic blog "Saudável como um pêro, sem desespero". It's a simple, practical and healthy recipe and as it's made with rice flour it's also gluten free. You can serve it as a main dish with rice or salad or also as a snack.

Ingredients:
Prontos a comer/Ready to eat 
  • 60 grams of rice (to make the flour)
  • 2 eggs + 2 egg whites
  • 1 tablespoon of light greek yogurt
  • 2 little cans of tuna in brine or 1 big can (approx. 130g)
  • 1 onion
  • 50 grams os peppers (I use frozen peppers)
  • 190 grams of chopped tomatoes
  • salt and black pepper to taste
Directions:
  1. Preheat the oven at 180ºC.
  2. Put the rice in the Thermomix bowl and grind for a few seconds at speed 10 until it turns to flour. Remove from the Thermomix bowl and reserve in a bowl.
  3. Put the onion, peppers and the chopped tomatoes in the Thermomix bowl and chopp 5 seconds, speed 6. After that, with the spatula, remove all the residues from the bowl's walls and program 6 minutes, at 100ºC, speed 1.
  4. In the bowl with the rice flour, add the tow eggs,the two egg whites and the greek yogurt and mix it together until smooth.
  5. When finished the thermomix program, add the drained tuna and season with salt and black pepper to taste, program another 5 minutes, 100ºC, speed 1.
  6. To the bowl with the mixture of rice flour and eggs gently add the misture of tuna, always mixing it together to avoid the eggs to cook too fast.
  7. Put this mixture in silicone muffin moulds and bake in the oven for about 30 minutes or until well cooked.
Serves: 6 muffins

Waffles de aveia/ Oat waffles

Waffles, quem não gosta? Eu andava a namorar uma máquina de fazer waffles há imenso tempo, finalmente resolvi comprar uma e passar à acção. Uma vez mais na tentativa de encontrar boas receitas, mas sempre um bocadinho mais saudáveis, pesquisei várias receitas de waffles e como adoro aveia, waffles de aveia pareceram-me uma óptima solução.
Esta receita é uma adaptação de várias receitas que encontrei disponíveis na internet e que na minha opinião saíram 5 estrelas

Ingredientes:

  • 1 1/2 chávena de farinha de trigo
  • 1 chávena de flocos de aveia
  • 3 colheres de chá de fermento em pó
  • 1/2 colher de chá de canela em pó
  • 2 ovos
  • 1 1/2 chávena de leite (qualquer tipo de leite, eu usei leite de vaca magro)
  • 3 colheres de sopa de margarina
  • 1 colher de sopa de açúcar amarelo

  
Preparação:

  1. Ligar a máquina de fazer waffles para que esta aqueça.
  2. Colocar todos os ingredientes no copo da Bimby e misturar tudo durante alguns segundos na velocidade 4, até ficar uma mistura homogénea.
  3. Quando a máquina de waffles estiver pronta a usar, colocar um bocadinho de massa e seguir as instruções da máquina.
Serve: 6 waffles 

Servir com aquilo que mais gostarem, desde fruta, iogurte, mel, xaropes, manteiga de amendoim ou outros frutos secos, Nutella, doces, o céu é o limite. Eu gosto das minhas com banana às rodelas e com um fiozinho de mel.

Who doesn't love waffles? So good for that lazy Sunday breakfast... For some time I wanted a waffle machine, so last week I finally decided to buy one and start making waffles.
Once again I was trying to find tasty and also healthier recipes, so as I love oats, oat waffles seemed to be a great recipe to make. This recipe is an adaptation of several recipes that I found on the internet, and in my opinion a great one to give it a try.



Ingredients:

  • 1 1/2 cups of plain flour
  • 1 cup of porridge oats
  • 3 teaspoons of baking powder
  • 1/2 teaspoon of ground cinnamon
  • 2 eggs
  • 1 1/2 cups of milk (any milk, I used fat free skimmed milk)
  • 3 tablespoons of vegetable spread 
  • 1 tablespoon of golden sugar

Directions:


  1. Turn your waffle machine on to heat it up.
  2. Put all the ingredients in your Thermomix bowl and mix it all up for several seconds, velocity 4, until blended.
  3. When your waffle machine s ready pour a little bit of the batter and follow the machine instructions.
Servings: 6 waffles

Top with fruit, yogurt, honey, syrup, nut butter, Nutella, jams, everything you fancy. I like mine with a sliced banana and a drizzle of honey.

Bolinhos de canela/ Cinnamon biscuits

Estes bolinhos são fantásticos, perfeitos para estes dias de Outono e além disso deixam toda a casa com um perfume fantástico a canela.
Esta receita está feita para a minha grande ajudante de cozinha, a Bimby, mas pode perfeitamente ser adaptada para ser feita de uma maneira mais tradicional.

Ingredientes:

  • 500 gramas de farinha com fermento
  • 200 gramas de manteiga amolecida (não derretida)
  • 170 gramas de açúcar amarelo
  • 2 ovos
  • Canela (para polvilhar)
Preparação:
  1. No copo da Bimby colocar todos os ingredientes, excepto a canela e programar 30seg/vel 6.
  2. Colocar a massa numa taça e levar ao frigorífico durante 15 minutos.
  3. Fazer bolinhas de massa, com as mãos.
  4. Passar as bolinhas em canela de modo a ficarem totalmente cobertas.
  5. Dispor os bolinhos num tabuleiro de forno, forrado com papel vegetal. 
  6. Levar ao forno pré aquecido a 180ºC durante 15 a 20 minutos.
  7. Retirá-los do forno e deixar arrefecer numa grade ou rede.

These biscuits are amazing, little "balls" of cinnamon perfection. If you like cinnamon, these are perfect for Autumn/Winter days and in top of that they make the whole house smell of cinnamon, so it's a win-win recipe!
This recipe is for my great kitchen helper, my Thermomix, but it's easily adapted to a more traditional way of cooking.

Ingredients: 
  • 500 grams of self-raising flour
  • 200 grams of soften butter (not melted)
  • 170 grams of brown sugar
  • 2 eggs
  • Cinnamon (for coating)
Directions:
  1. Put all the ingredients (except the cinnamon) in the Thermomix bowl and program 30sec/speed 6.
  2. Put the dough in the fridge and let it chill for 15 minutes.
  3. With your hands make small balls of dough.
  4. Lightly coat the balls in cinnamon.
  5. Put the biscuits on an oven tray with baking paper.
  6. Cook the biscuits in the oven, pre-heated at 180ºC, for about 15 to 20 minutes.
  7. After cooked, let the biscuits cool on a cooling rack.

English Muffins (Máquina de fazer pão/ Machine bread method)

Há uns 7 anos cruzei-me com estes maravilhosos pãezinhos e desde então ficou o bichinho de encontrar uma receita que fosse tão saborosa como a original e fácil de executar.

Uma das coisas que não gosto no processo de fazer pão é a morosa espera para a massa levedar, quando me apetece experimentar alguma coisa, fico demasiado impaciente para a provar. Mas pronto, no caso das massas lêvedas, como o próprio nome indica, têm de levedar e lá se tem de ter um bocadinho de paciência.
Uma coisa que me ajuda a ultrapassar a espera e até esquecer-me dela é a uma das minhas ajudantes de cozinha, a máquina de fazer pão, colocam-se os ingredientes lá dentro, escolhe-se o programa de fazer massa et voilà depois de mexer, amassar e levedar temos a massa pronta a usar sem termos de nos preocupar com ela.

Quando me cruzei com esta receita no Pinterest e vi que era para fazer a massa na máquina do pão, não resisti e achei que agora que vivia em Londres era a altura perfeita para experimentar estes pães anglo-saxónicos.

Então para fazer os English muffins vão precisar de:

  • 1 chávena* de leite
  • 3 colheres de sopa de manteiga
  • 1 ovo batido
  • 1/2 colher de chá de sal
  • 2 colheres de chá de açúcar
  • 3 1/2 chávenas* de farinha
  • 1 1/2 colheres de chá de fermento padeiro seco
  • Farinha de milho para polvilhar
Preparação
  1. Colocar todos os ingredientes (excepto a farinha de milho) na cuba da máquina de fazer pão, pela ordem acima mencionada.
  2. Seleccionar o programa de fazer massa.
  3. Quando o programa acabar, polvilhar a bancada com farinha de milho e tirar a massa levedada da cuba.
  4. Com as mão achatar a massa até obter um rectângulo com aproximadamente 1.5cm de espessura.
  5. Polvilhar ambos os lados com farinha de milho e cortar círculos de massa, usando um cortador de massa, um copo ou até uma lata de atum redonda.
  6. Quando tiver cortado todos os círculos, juntar as sobras de massa, estender novamente à mesma espessura e cortar mais círculos até acabar a massa.
  7. Colocar os círculos de massa sobre papel vegetal, cobrir com um pano e deixar levedar durante 20-30 minutos até aumentarem ligeiramente menos do dobro.
  8. Aquecer um frigideira antiaderente ou uma chapa em lume brando.
  9. Cozinhar os muffins durante aproximadamente 5-7 minutos de cada lado, até estarem dourados de ambos os lados.

Esta receita dá para fazer aproximadamente 20 muffins.
Para servir, cortar os muffins ao meio com uma faca de pão ou com a ajuda de um garfo (espetando-o em toda a circunferência do muffin). Pode-se servir ainda morno ou torrado, com manteiga, doce, o que mais gostarem, o céu é o limite. Também se podem congelar e servir depois de aquecidos no microondas ou torrados. 

Para mim é dos melhores pães para torrar e sabe tão bem neste dias frios e chuvosos acompanhado de um chá quente. Vale a pena experimentar sem dúvida alguma.

Seven years ago I came across this great muffins in Lisbon, since then I've been looking for a recipe that was as tasty as the original and easy to do.

One of the things that I hate about making bread, is the proving. I hate that I have to wait so long to taste my creation. But well, sometimes we have to wait for the good things in life, so we have to be a little patient.
Thankfully I have a little help to make the wait easier, my bread machine, one of my kitchen helpers. So I just have to put all the ingredients inside, select the correct program et voilà, after all the mixing, kneading and proving, the dough is ready to use, without having to concern ourselves with it.
When I came across this recipe on Pinterest and saw that was a bread machine recipe, I couldn't resist and since I currently live in London, I thought that was the perfect opportunity to make English Muffins from scratch. 

So to make this beautiful muffins you'll need:
  • 1 cup of milk
  • 3 tablespoons of butter
  • 1 beaten egg
  • 1/2 teaspoon of salt
  • 2 teaspoons of sugar
  • 3 1/2 cups of all-purpose flour
  • 1 1/2 teaspoons of dry yeast
  • cornmeal

Directions
  1. Put all the ingredients (except cornmeal) in the machine in the order listed. Start the dough cycle.
  2. When the cycle is finished sprinkle cornmeal over the work area. Put the dough on top of the cornmeal and use your hands to pat the dough into a 1,5 cm thick rectangle.
  3. Turn the dough so that each side gets lightly coated with cornmeal.
  4. Using a round dough cutter, a large glass or a large tuna can, cut the dough into rounds. When you run out of dough gather up the trimmings and cut more rounds.
  5. Place the rounds on a baking sheet, cover and let rise for 20 to 30 minutes (until not quite double).
  6. Heat a non stick pan or griddle over a low flame.
  7. Cook the muffins about 5 to 7 minutes on each side. They should be golden brown on both sides.

This recipe makes about 20 muffins.
To serve, split the muffins with a fork or serrated knife. You can serve them warm or toasted with butter, jam, or everything you fancy (the sky is the limit). These also freeze very well and can be reheated in the microwave or toasted.

To me these are the best ones to toast and they go so well on cold and rainy days like these with a hot cup of tea. They are worth a try without a doubt.

Não sou nenhuma masterchef, a minha cozinha tem de ser simples, prática, rápida e deliciosa, em suma refeições para o dia-a-dia. Gosto de cozinhar, especialmente doces e bolos pois sou uma gulosa incurável.

Neste espaço vou então colocar as minhas experiências culinárias, receitas e dicas com que me vou cruzando nas pesquisas que faço.

I'm no masterchef, my cooking has to be simple, practical, quick and delicious of course, long story short meals for everyday. I like to cook, especially desserts and cakes because I have a sweet tooth (a big one).
