Ingredientes:
- 250 gramas de farinha de milho
- 150 gramas de farinha de trigo
- 400 gramas de água
- 11 gramas de fermento de padeiro seco
- 1 colher de chá de sal
- 1 colher de chá de açúcar
- 30 gramas de azeite
Preparação:
- Fazer a massa de levedura, colocando no copo da Bimby 100 gramas de água, o fermento, 50 gramas de farinha de trigo e o açúcar e programar 1 minuto, 37ºC, velocidade 3. Retirar a mistura do copo e deixar levedar num local morno.
- No copo da Bimby colocar as restantes 300 gramas de água e programar 3 minutos, 100ºC, velocidade 1.
- Adicionar a farinha de milho, misturar 1 minuto na velocidade 3 e deixar no copo a arrefecer até chegar aos 37ºC.
- Quando a massa estiver morna adicionar a massa de levedura que esteve a repousar, o azeite, o sal e as restantes 100 gramas de farinha de trigo e amassar 4 minutos, velocidade espiga.
- Retirar a massa do copo, polvilhar com farinha de trigo, fazer uma bola e colocar num tabuleiro de ir ao forno, polvilhado com farinha. Deixar levedar num local morno até dobrar de volume.
- Levar ao forno, pré-aquecido a 200ºC, durante aproximadamente 50 a 60 minutos ou até estar bem cozida.
If there is a favourite bread, mine is the Portuguese Corn Bread, I just love it's crunchy crust with the moist, yellow and slightly sweet inside...hmm so good! The recipe that I bring you today is a Thermomix adaptation of the recipe that my grandmother usually make. As I currently live in London and it's difficult to buy this magnificent bread, we have no escuses not to make it at home.
- 250 grams of corn meal
- 150 grams of plain flour
- 400 grams of water
- 11 grams of dried yeast
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 30 grams of olive oil
Directions:
- Make the leavening batter by adding 100 grams of water, yeast, 50 grams of plain flour and sugar, in the Thermomix bowl, and program 1 minute, 37ºC, speed 3. Remove the batter and let it prove in a warm environment.
- Put 300 grams of water in the Thermomix bowl, and heat for 3 minutes, 100ºC, speed 1.
- Add the corn meal and mix 1 minute, speed 3 and let it cool down in the Thermomix bowl until it reaches 37ºC.
- When the dough it's warm, add the leavening batter, the olive oil, salt and 100 grams of plain flour and knead for 4 minutes, in the thermomix kneading function.
- Remove the dough from the bowl, dust with flour, shape it in a ball and put it in a oven tray, dusted whit flour. Let it prove until it doubles it's volume.
- Bake in a pre-heated oven (200ºC) for about 50/60 minutes or until it's baked.
